- Dashi stock - 500 milliliters (or vegetable broth for a vegan option)
- Green onions - for garnish
Steps
- Prepare the dashi stock by bringing 500 milliliters of water to a boil, then adding dashi powder and stirring until dissolved.
- In a bowl, season the chicken pieces with salt, black pepper, soy sauce, and mirin. Let marinate for 15 minutes.
- Once marinated, skewer the chicken pieces, zucchini slices, and mushroom slices onto bamboo skewers.
- Dredge each skewer in panko breadcrumbs, ensuring they are well coated.
- Heat vegetable oil in a pan over medium heat. Fry the skewers for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
- In a separate pot, sauté sliced onions, garlic, and ginger in a little oil until fragrant.
- Pour the prepared dashi stock into the pot with sautéed vegetables and bring to a simmer. Cook for about 10 minutes.
- Serve the hot broth in bowls, topped with the fried kushikatsu skewers and garnish with chopped green onions.
