Ingredients

  • Panko bread crumbs - 100 grams
  • All-purpose flour - 50 grams
  • Egg - 1, beaten
  • Cooked rice - 300 grams (about 1.5 cups)
  • Vegetable oil - for frying
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onions - 2, finely chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Prepare the ingredients: Cut the chicken, zucchini, and bell pepper into appropriate sizes for skewering.
  2. Skewer the chicken pieces, zucchini rounds, and bell pepper squares onto bamboo skewers, alternating between the ingredients.
  3. Set up a breading station: Place flour in one shallow dish, beaten egg in another, and panko bread crumbs in a third.
  4. Coat each skewer first in flour, then dip into the beaten egg, and finally roll in panko to coat evenly.
  5. In a deep frying pan or pot, heat vegetable oil over medium heat until it reaches 170°C (340°F).
  6. Fry the skewers in batches for about 4-5 minutes or until golden brown and cooked through, then drain on paper towels.
  7. In a small saucepan, combine soy sauce, mirin, and sugar over low heat until the sugar dissolves, creating a sauce.
  8. To serve, place a portion of cooked rice in each bowl, top with the fried skewers, drizzle with the sauce, and garnish with green onions and sesame seeds.
