Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Green onions - 2 stalks, cut into 5 cm pieces
  • Coconut aminos - 60 ml
  • Rice vinegar - 15 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. In a mixing bowl, combine coconut aminos, rice vinegar, minced garlic, grated ginger, sesame oil, salt, and black pepper to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade. Let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken pieces and green onion pieces alternately onto the skewers.
  5. Once the grill is hot, place the skewers on it and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  6. Serve hot, drizzled with any remaining marinade if desired.
