Ingredients

  • Firm tofu - 300 grams
  • Soy sauce (gluten-free) - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Green onion (sliced) - 2 tablespoons
  • Bell pepper (cut into squares) - 1 medium
  • Zucchini (sliced into rounds) - 1 small
  • Skewers (soaked) - 4-6 pieces

Steps

  1. Press the firm tofu for 15 minutes to remove excess water, then cut it into 2.5 cm cubes.
  2. In a bowl, combine the soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
  3. Add the cubed tofu to the marinade, ensuring all pieces are coated. Let it marinate for at least 10 minutes.
  4. While the tofu is marinating, prepare the vegetables by cutting the bell pepper into squares and slicing the zucchini into rounds.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Thread the marinated tofu, bell pepper, and zucchini onto the soaked skewers, alternating between ingredients.
  7. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
  8. Remove from the grill and sprinkle with sliced green onions before serving.
