Ingredients

  • Cauliflower - 300 grams (riced)
  • Egg - 1 large
  • Mozzarella cheese - 100 grams (shredded)
  • Parmesan cheese - 30 grams (grated)
  • Chicken breast - 200 grams (cubed)
  • Bell pepper - 50 grams (sliced)
  • Zucchini - 50 grams (sliced)
  • Teriyaki sauce - 30 ml
  • Green onions - 2 stalks (sliced)
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rice the cauliflower using a food processor until it resembles fine grains.
  3. Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
  4. In a mixing bowl, combine the steamed cauliflower, egg, mozzarella cheese, Parmesan cheese, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
  7. While the crust is baking, marinate the cubed chicken in teriyaki sauce for about 10 minutes.
  8. In a skillet over medium heat, add olive oil and cook the marinated chicken for 5-7 minutes until fully cooked.
  9. Add sliced bell pepper and zucchini to the skillet, cooking for an additional 3-4 minutes until tender.
  10. Remove the pizza crust from the oven, top it with the cooked chicken and vegetables, and drizzle with a little extra teriyaki sauce if desired.
  11. Return the pizza to the oven and bake for another 5 minutes.
  12. Garnish with sliced green onions before serving.
