- Cauliflower - 300 grams (riced)
- Egg - 1 large
- Mozzarella cheese - 100 grams (shredded)

- Chicken breast - 200 grams (cubed)
- Bell pepper - 50 grams (sliced)
- Zucchini - 50 grams (sliced)
- Teriyaki sauce - 30 ml
- Green onions - 2 stalks (sliced)
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 220°C (425°F).
- Rice the cauliflower using a food processor until it resembles fine grains.
- Steam the riced cauliflower for about 5 minutes until tender, then let it cool slightly.
- In a mixing bowl, combine the steamed cauliflower, egg, mozzarella cheese, Parmesan cheese, salt, and black pepper. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes until golden and firm.
- While the crust is baking, marinate the cubed chicken in teriyaki sauce for about 10 minutes.
- In a skillet over medium heat, add olive oil and cook the marinated chicken for 5-7 minutes until fully cooked.
- Add sliced bell pepper and zucchini to the skillet, cooking for an additional 3-4 minutes until tender.
- Remove the pizza crust from the oven, top it with the cooked chicken and vegetables, and drizzle with a little extra teriyaki sauce if desired.
- Return the pizza to the oven and bake for another 5 minutes.
- Garnish with sliced green onions before serving.
