Ingredients

  • Chicken thighs - 300 grams, boneless and skinless, cut into bite-sized pieces
  • Gluten-free soy sauce - 4 tablespoons
  • Mirin - 2 tablespoons
  • Sake - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Green onions - 2 stalks, chopped for garnish
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a bowl, mix gluten-free soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove the skewers from the grill and let them rest for a couple of minutes.
  7. Garnish with chopped green onions and serve with a side of steamed rice or salad.
