- Firm tofu - 300 grams
- Coconut aminos - 4 tablespoons
- Sesame oil - 1 tablespoon
- Fresh ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Green onions - 2, sliced
- Sesame seeds - 1 tablespoon
- Red bell pepper - 1, cut into cubes
- Zucchini - 1, cut into cubes
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- Press the tofu for 15-20 minutes to remove excess moisture, then cut it into 2.5 cm cubes.
- In a bowl, mix coconut aminos, sesame oil, grated ginger, and minced garlic to create the marinade.
- Add the tofu cubes to the marinade, ensuring they are coated well. Let them marinate for at least 10 minutes.
- While the tofu is marinating, prepare the vegetables by cutting the red bell pepper and zucchini into similar-sized cubes.
- Thread the marinated tofu, red bell pepper, and zucchini onto the soaked wooden skewers alternately.
- Preheat a grill or grill pan over medium heat.
- Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden brown and the vegetables are tender.
- Remove from the grill, sprinkle with sliced green onions and sesame seeds, and serve immediately.
