Ingredients

  • Firm tofu - 300 grams
  • Coconut aminos - 4 tablespoons
  • Sesame oil - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Green onions - 2, sliced
  • Sesame seeds - 1 tablespoon
  • Red bell pepper - 1, cut into cubes
  • Zucchini - 1, cut into cubes
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. Press the tofu for 15-20 minutes to remove excess moisture, then cut it into 2.5 cm cubes.
  2. In a bowl, mix coconut aminos, sesame oil, grated ginger, and minced garlic to create the marinade.
  3. Add the tofu cubes to the marinade, ensuring they are coated well. Let them marinate for at least 10 minutes.
  4. While the tofu is marinating, prepare the vegetables by cutting the red bell pepper and zucchini into similar-sized cubes.
  5. Thread the marinated tofu, red bell pepper, and zucchini onto the soaked wooden skewers alternately.
  6. Preheat a grill or grill pan over medium heat.
  7. Grill the skewers for about 10-12 minutes, turning occasionally until the tofu is golden brown and the vegetables are tender.
  8. Remove from the grill, sprinkle with sliced green onions and sesame seeds, and serve immediately.
