Ingredients

  • Salmon fillet - 200 grams
  • Zucchini - 1 medium, cut into thick slices
  • Bell pepper - 1 medium, cut into squares
  • Shiitake mushrooms - 100 grams, stems removed
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Sea salt - to taste
  • Black pepper - to taste
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, mix coconut aminos, sesame oil, grated ginger, minced garlic, sea salt, and black pepper to create a marinade.
  2. Cut the salmon fillet into bite-sized cubes and add to the marinade, ensuring all pieces are coated. Let it marinate for 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated salmon, zucchini slices, bell pepper squares, and shiitake mushrooms onto the skewers alternately.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender.
  6. Remove from grill and let cool for a minute before serving.
