- Sesame oil - 1 tablespoon
- Fresh ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Sea salt - to taste
- Black pepper - to taste
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a bowl, mix coconut aminos, sesame oil, grated ginger, minced garlic, sea salt, and black pepper to create a marinade.
- Cut the salmon fillet into bite-sized cubes and add to the marinade, ensuring all pieces are coated. Let it marinate for 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated salmon, zucchini slices, bell pepper squares, and shiitake mushrooms onto the skewers alternately.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the salmon is cooked through and the vegetables are tender.
- Remove from grill and let cool for a minute before serving.
