- Soba noodles (100% buckwheat) - 100g
- Chicken breast - 200g, cubed
- Zucchini - 1 medium, sliced into rounds
- Red bell pepper - 1, cut into chunks
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Soak the soba noodles in cold water for 10 minutes, then drain and set aside.
- In a bowl, combine chicken cubes, zucchini, red bell pepper, garlic, ginger, coconut aminos, sesame oil, salt, and black pepper. Mix well to coat the chicken and vegetables.
- Thread the marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
- Heat the olive oil in a grill pan over medium heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Meanwhile, bring a pot of water to a boil and cook the soaked soba noodles for 4-5 minutes until tender. Drain and rinse under cold water to stop cooking.
- Serve the soba noodles topped with the grilled skewers and garnish with chopped green onion and sesame seeds.
