Ingredients

  • Soba noodles (100% buckwheat) - 100g
  • Chicken breast - 200g, cubed
  • Zucchini - 1 medium, sliced into rounds
  • Red bell pepper - 1, cut into chunks
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Soak the soba noodles in cold water for 10 minutes, then drain and set aside.
  2. In a bowl, combine chicken cubes, zucchini, red bell pepper, garlic, ginger, coconut aminos, sesame oil, salt, and black pepper. Mix well to coat the chicken and vegetables.
  3. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
  4. Heat the olive oil in a grill pan over medium heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. Meanwhile, bring a pot of water to a boil and cook the soaked soba noodles for 4-5 minutes until tender. Drain and rinse under cold water to stop cooking.
  6. Serve the soba noodles topped with the grilled skewers and garnish with chopped green onion and sesame seeds.
