Ingredients
- Mackerel fillets - 300 grams
- Soy sauce (gluten-free) - 2 tablespoons
- Mirin - 1 tablespoon
- Brown sugar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Green onions (sliced) - 2 stalks
- Bell pepper (sliced) - 1 medium

Steps
- In a bowl, mix together the gluten-free soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger to create the marinade.
- Cut the mackerel fillets into bite-sized pieces and add them to the marinade. Let them marinate for at least 15 minutes.
- While the fish is marinating, prepare the vegetables by slicing the bell pepper and zucchini into thick strips.
- Soak wooden skewers in water for about 10 minutes to prevent burning.
- Preheat a grill or grill pan over medium heat.
- Once the mackerel has marinated, thread the fish pieces onto the soaked skewers, alternating with slices of bell pepper and zucchini.
- Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the fish is cooked through and has grill marks.
- Serve the Kushi Saba skewers hot, garnished with sliced green onions and lemon wedges on the side.
