  • Zucchini (sliced) - 1 small

Steps

  1. In a bowl, mix together the gluten-free soy sauce, mirin, brown sugar, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Cut the mackerel fillets into bite-sized pieces and add them to the marinade. Let them marinate for at least 15 minutes.
  3. While the fish is marinating, prepare the vegetables by slicing the bell pepper and zucchini into thick strips.
  4. Soak wooden skewers in water for about 10 minutes to prevent burning.
  5. Preheat a grill or grill pan over medium heat.
  6. Once the mackerel has marinated, thread the fish pieces onto the soaked skewers, alternating with slices of bell pepper and zucchini.
