Ingredients

  • Japanese eggplant - 2 medium
  • White miso paste - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced for garnish
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Slice the Japanese eggplants in half lengthwise and score the flesh in a criss-cross pattern.
  3. In a small bowl, mix together the white miso paste, coconut aminos, honey, sesame oil, minced garlic, and grated ginger until smooth.
  4. Brush the miso mixture generously over the cut sides of the eggplant halves.
  5. Place the eggplants cut side down on the grill and cook for about 10-12 minutes, until tender and grill marks appear.
  6. Flip the eggplants and brush with any remaining miso mixture. Grill for an additional 2-3 minutes.
  7. Remove from the grill, sprinkle with sliced green onions and sesame seeds before serving.
