Ingredients

  • Udon noodles - 200g

  • Vegetable broth - 500ml
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped for garnish
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. In a bowl, toss the sliced eggplant and bitter melon with sesame oil, garlic, and ginger, ensuring they are well coated.
  3. Grill the eggplant and bitter melon for 5-7 minutes on each side until tender and slightly charred.
  4. While the vegetables are grilling, cook the udon noodles according to package instructions, then drain and set aside.
  5. In a pot, combine the vegetable broth and miso paste, stirring until the miso is fully dissolved. Bring to a simmer.
  6. Add the grilled vegetables to the miso broth and cook for another 2-3 minutes to infuse flavors.
  7. In two bowls, place a serving of udon noodles, and ladle the miso vegetable broth with eggplant and bitter melon over the top.
  8. Garnish with chopped green onions and toasted sesame seeds before serving.
