- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped for garnish
- Sesame seeds - 1 tablespoon, toasted
Steps
- Preheat a grill or grill pan over medium heat.
- In a bowl, toss the sliced eggplant and bitter melon with sesame oil, garlic, and ginger, ensuring they are well coated.
- Grill the eggplant and bitter melon for 5-7 minutes on each side until tender and slightly charred.
- While the vegetables are grilling, cook the udon noodles according to package instructions, then drain and set aside.
- In a pot, combine the vegetable broth and miso paste, stirring until the miso is fully dissolved. Bring to a simmer.
- Add the grilled vegetables to the miso broth and cook for another 2-3 minutes to infuse flavors.
- In two bowls, place a serving of udon noodles, and ladle the miso vegetable broth with eggplant and bitter melon over the top.
- Garnish with chopped green onions and toasted sesame seeds before serving.
