- Coconut aminos - 1 tablespoon
- Honey - 1 teaspoon
- Sesame oil - 1 teaspoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, minced
- Skewers - 4-6 (soaked in water for 30 minutes if wooden)
Steps
- Cut the chicken breast into bite-sized pieces and place in a mixing bowl.
- In a separate bowl, whisk together the miso paste, coconut aminos, honey, sesame oil, minced garlic, and ginger to create the marinade.
- Pour the marinade over the chicken, ensuring all pieces are well-coated. Cover and refrigerate for at least 15 minutes to marinate.
- While the chicken is marinating, chop the zucchini and red bell pepper into bite-sized chunks.
- Preheat a grill or grill pan over medium heat.
- Thread the marinated chicken and chopped vegetables onto the skewers, alternating between chicken and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
- Remove from the grill and let rest for a minute before serving. Drizzle with any remaining marinade if desired.
