Ingredients

  • Chicken thigh - 300 grams, boneless, skinless
  • Zucchini - 100 grams, sliced into thick rounds
  • Red bell pepper - 100 grams, cut into squares
  • Shiitake mushrooms - 100 grams, stems removed
  • Gluten-free soy sauce - 60 ml
  • Mirin - 30 ml
  • Sake - 30 ml
  • Sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Black sesame seeds - 1 tablespoon, for garnish
  • Green onions - 2, chopped for garnish
  • Bamboo skewers - 4, soaked in water for 30 minutes

Steps

  1. Start by cutting the chicken thigh into bite-sized pieces and place them in a mixing bowl.
  2. In a separate bowl, combine the gluten-free soy sauce, mirin, sake, sugar, and sesame oil to create the marinade.
  3. Pour the marinade over the chicken and let it marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. While the grill is heating, prepare the skewers by threading the marinated chicken, zucchini, red bell pepper, and shiitake mushrooms onto the bamboo skewers, alternating between chicken and vegetables.
  6. Once the grill is hot, place the skewers on the grill and cook for 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a couple of minutes.
  8. Garnish the skewers with black sesame seeds and chopped green onions before serving.
