  • Vegetable oil - for frying
  • Japanese dipping sauce (such as tonkatsu sauce) - for serving

Steps

  1. Wash and cut the zucchini, carrot, red bell pepper, and mushrooms into bite-sized pieces.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
  3. Gradually add cold water to the flour mixture, whisking until a smooth batter forms.
  4. In a separate plate, spread out the panko breadcrumbs.
  5. Skewer the vegetable pieces onto bamboo skewers, alternating between different vegetables for variety.
  6. Heat vegetable oil in a deep pan over medium heat until hot.
  7. Dip each skewer into the batter, allowing excess to drip off, then coat with panko breadcrumbs.
  8. Carefully place the coated skewers in the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  9. Remove the skewers from the oil and place them on paper towels to drain excess oil.
