Steps
- Wash and cut the zucchini, carrot, red bell pepper, and mushrooms into bite-sized pieces.
- In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper.
- Gradually add cold water to the flour mixture, whisking until a smooth batter forms.
- In a separate plate, spread out the panko breadcrumbs.
- Skewer the vegetable pieces onto bamboo skewers, alternating between different vegetables for variety.
- Heat vegetable oil in a deep pan over medium heat until hot.
- Dip each skewer into the batter, allowing excess to drip off, then coat with panko breadcrumbs.
- Carefully place the coated skewers in the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the skewers from the oil and place them on paper towels to drain excess oil.
