- Mirin - 1 tablespoon
- Dashi stock - 200 ml
- Cooked Japanese rice - 300 grams
- Green onions - 2 stalks (chopped)

Steps
- Cut the chicken breast into thin strips and season with salt and black pepper.
- Skewer the chicken strips onto bamboo skewers (2-3 pieces per skewer).
- Set up a breading station with three shallow dishes: one with flour, one with beaten egg, and one with panko breadcrumbs.
- Coat each skewer in flour, then dip in the egg, and finally coat with panko breadcrumbs to create a crispy layer.
- Heat sesame oil in a frying pan over medium heat and fry the skewers until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.
- In a small saucepan, combine dashi stock, soy sauce, and mirin, and bring to a simmer.
- Place cooked rice in two bowls and pour the simmering sauce over the rice.
- Top each bowl of rice with the crispy kushi katsu skewers and garnish with chopped green onions.
- Serve immediately while hot.
