Ingredients

  • Chicken breast - 200 grams
  • Panko breadcrumbs - 100 grams
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Dashi stock - 200 ml
  • Cooked Japanese rice - 300 grams
  • Green onions - 2 stalks (chopped)
  • Sesame oil - 1 teaspoon

Steps

  1. Cut the chicken breast into thin strips and season with salt and black pepper.
  2. Skewer the chicken strips onto bamboo skewers (2-3 pieces per skewer).
  3. Set up a breading station with three shallow dishes: one with flour, one with beaten egg, and one with panko breadcrumbs.
  4. Coat each skewer in flour, then dip in the egg, and finally coat with panko breadcrumbs to create a crispy layer.
  5. Heat sesame oil in a frying pan over medium heat and fry the skewers until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.
  6. In a small saucepan, combine dashi stock, soy sauce, and mirin, and bring to a simmer.
  7. Place cooked rice in two bowls and pour the simmering sauce over the rice.
  8. Top each bowl of rice with the crispy kushi katsu skewers and garnish with chopped green onions.
  9. Serve immediately while hot.
