Ingredients

  • Ground chicken - 200 grams
  • Shiitake mushrooms - 50 grams, finely chopped
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cauliflower - 200 grams, riced
  • Egg - 1, beaten
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a mixing bowl, combine the ground chicken, chopped shiitake mushrooms, green onion, minced garlic, grated ginger, coconut aminos, sesame oil, riced cauliflower, and the beaten egg. Season with salt and pepper.
  2. Mix the ingredients thoroughly until well combined.
  3. Take a portion of the mixture and mold it into an oval shape (about 2 tablespoons) and thread it onto a skewer. Repeat with the remaining mixture until all are skewered.
  4. Heat a non-stick skillet over medium heat and add a little sesame oil.
  5. Place the skewered gyoza in the skillet and cook for about 3-4 minutes on each side until golden brown and cooked through.
  6. Serve hot, garnished with extra green onions or a side of coconut aminos for dipping.
