  • Green bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Skewers - 4 (if wooden, soaked in water)

Steps

  1. Cut the chicken breast into bite-sized cubes and place them in a bowl.
  2. In a separate bowl, mix coconut aminos, grated ginger, minced garlic, and sesame oil to create the marinade.
  3. Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  4. While the chicken is marinating, prepare the vegetables by chopping the green bell pepper, zucchini, and carrot.
  5. Heat olive oil in a pan over medium heat. Add the vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender but still crisp.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  8. Grill the chicken skewers for about 8-10 minutes, turning occasionally, until they are cooked through and have nice grill marks.
  9. Serve the grilled chicken skewers with the sautéed vegetables on the side.
