- Zucchini - 1 medium, sliced
- Carrot - 1 medium, sliced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Skewers - 4 (if wooden, soaked in water)
Steps
- Cut the chicken breast into bite-sized cubes and place them in a bowl.
- In a separate bowl, mix coconut aminos, grated ginger, minced garlic, and sesame oil to create the marinade.
- Pour the marinade over the chicken cubes, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by chopping the green bell pepper, zucchini, and carrot.
- Heat olive oil in a pan over medium heat. Add the vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender but still crisp.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
- Grill the chicken skewers for about 8-10 minutes, turning occasionally, until they are cooked through and have nice grill marks.
- Serve the grilled chicken skewers with the sautéed vegetables on the side.
