Ingredients

  • Chicken thigh - 300 grams, boneless and skinless
  • Soy sauce (Kosher) - 60 ml
  • Mirin (Kosher) - 30 ml
  • Sake (Kosher) - 30 ml
  • Brown sugar - 1 tablespoon (15 grams)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Skewers - 4 (soaked in water if wooden)

Steps

  1. In a bowl, mix together the soy sauce, mirin, sake, brown sugar, minced garlic, grated ginger, and sesame oil to create the marinade.
  2. Cut the chicken thighs into 2.5 cm cubes and add them to the marinade. Ensure all pieces are well coated, then cover and refrigerate for at least 15 minutes.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  5. Grill the skewers for about 5-7 minutes on each side or until the chicken is cooked through and has nice grill marks, basting with leftover marinade halfway through.
  6. Once cooked, remove from the grill and sprinkle with chopped green onions before serving.
