- Firm tofu - 300 grams
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Sesame oil - 1 tablespoon
- Grated ginger - 1 teaspoon
- Green onions - 2 stalks, chopped
- Bell pepper - 1, cut into chunks
- Zucchini - 1 small, sliced
- Cherry tomatoes - 10, halved
- Sesame seeds - 1 tablespoon for garnish
- Skewers - 4 (if wooden, soak in water for 30 minutes)
Steps
- Press the firm tofu between paper towels to remove excess moisture for about 15 minutes.
- Cut the tofu into 2.5 cm cubes.
- In a bowl, mix soy sauce, mirin, sesame oil, and grated ginger to create the marinade.
- Add the tofu cubes to the marinade and let them soak for 10 minutes, turning occasionally.
- While the tofu is marinating, prepare the vegetables by cutting the bell pepper and zucchini, and halving the cherry tomatoes.
- Preheat the grill or a grill pan over medium heat.
- Thread the marinated tofu and prepared vegetables onto the skewers, alternating between them.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
- Remove from the grill and sprinkle with chopped green onions and sesame seeds before serving.
