Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Grated ginger - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Bell pepper - 1, cut into chunks
  • Zucchini - 1 small, sliced
  • Cherry tomatoes - 10, halved
  • Sesame seeds - 1 tablespoon for garnish
  • Skewers - 4 (if wooden, soak in water for 30 minutes)

Steps

  1. Press the firm tofu between paper towels to remove excess moisture for about 15 minutes.
  2. Cut the tofu into 2.5 cm cubes.
  3. In a bowl, mix soy sauce, mirin, sesame oil, and grated ginger to create the marinade.
  4. Add the tofu cubes to the marinade and let them soak for 10 minutes, turning occasionally.
  5. While the tofu is marinating, prepare the vegetables by cutting the bell pepper and zucchini, and halving the cherry tomatoes.
  6. Preheat the grill or a grill pan over medium heat.
  7. Thread the marinated tofu and prepared vegetables onto the skewers, alternating between them.
  8. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the tofu is golden and the vegetables are tender.
  9. Remove from the grill and sprinkle with chopped green onions and sesame seeds before serving.
