Ingredients

  • Chestnuts - 200 grams, peeled and cooked

  • Shiitake mushrooms - 4, sliced
  • Kombu (dried seaweed) - 10 cm piece
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Water - 300 ml
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. In a pot, combine the water, kombu, soy sauce, mirin, and sugar, and bring to a gentle simmer over medium heat.
  2. Add the sliced carrot and shiitake mushrooms to the pot and cook for about 5 minutes until slightly tender.
  3. Add the cooked chestnuts to the pot and gently stir to combine, allowing them to heat through for another 5-7 minutes.
  4. Remove the kombu piece and discard it. Adjust the seasoning with salt to taste.
  5. Drizzle sesame oil over the dish before serving, and let it simmer for an additional 2 minutes to incorporate the flavors.
  6. Serve warm as a side dish, garnished with chopped scallions if desired.
