Ingredients
- Sweet rice flour (Mochiko) - 100 grams
- Water - 80 milliliters
- Sugar - 30 grams
- Chestnut puree - 100 grams
- Roasted chestnuts (chopped) - 50 grams
- Cornstarch (for dusting) - 10 grams
Steps
- In a mixing bowl, combine sweet rice flour, sugar, and water. Stir until the mixture is smooth and free of lumps.
- Transfer the mixture to a heatproof dish and steam it for 20 minutes, stirring halfway through, until it becomes translucent and sticky.
- While the dough is steaming, mix the chestnut puree and chopped roasted chestnuts in a separate bowl to create the filling.
- Once the dough is ready, allow it to cool slightly until it can be handled. Dust a clean surface with cornstarch to prevent sticking.
- Divide the dough into 4 equal pieces. Flatten each piece into a disk shape, about 1 cm thick.
- Place a spoonful of the chestnut filling in the center of each disk. Carefully fold the edges of the dough over the filling and pinch to seal, shaping them into smooth balls.
- Place the formed Kuri Manju on a plate dusted with cornstarch to prevent sticking. Allow them to rest for about 10 minutes before serving.
