Ingredients

  • sweet chestnuts - 200 grams
  • granulated sugar - 50 grams
  • water - 200 ml
  • salt - a pinch
  • vanilla extract - 1 teaspoon

Steps

  1. Begin by rinsing the sweet chestnuts under cold water to remove any dirt.
  2. In a pot, place the chestnuts and cover them with water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat and simmer for about 20 minutes or until the chestnuts are tender.
  4. Drain the chestnuts and let them cool slightly, then peel them while they are still warm.
  5. In a clean pot, combine the peeled chestnuts, 200 ml of fresh water, and a pinch of salt. Simmer on low heat for 10 minutes.
  6. Add the sugar and continue to simmer, stirring occasionally, until the mixture thickens and the chestnuts break down into a paste, about 10-15 minutes.
  7. Remove from heat and stir in the vanilla extract.
  8. Allow the Kuri Kinton to cool slightly before serving. You can serve it warm or chilled, as desired.
