- sweet chestnuts - 200 grams
- granulated sugar - 50 grams
- water - 200 ml
- salt - a pinch
- vanilla extract - 1 teaspoon
Steps
- Begin by rinsing the sweet chestnuts under cold water to remove any dirt.
- In a pot, place the chestnuts and cover them with water. Bring to a boil over medium heat.
- Once boiling, reduce the heat and simmer for about 20 minutes or until the chestnuts are tender.
- Drain the chestnuts and let them cool slightly, then peel them while they are still warm.
- In a clean pot, combine the peeled chestnuts, 200 ml of fresh water, and a pinch of salt. Simmer on low heat for 10 minutes.
- Add the sugar and continue to simmer, stirring occasionally, until the mixture thickens and the chestnuts break down into a paste, about 10-15 minutes.
- Remove from heat and stir in the vanilla extract.
- Allow the Kuri Kinton to cool slightly before serving. You can serve it warm or chilled, as desired.
