Steps
- Peel and chop the sweet potato into small cubes and place them in a pot of water.
- Bring the water to a boil, then reduce to a simmer and cook for about 20 minutes, or until the sweet potatoes are tender.
- While the sweet potatoes are cooking, prepare the chestnuts by chopping them into small pieces.
- Once the sweet potatoes are cooked, drain the water and return them to the pot.
- Add the chopped chestnuts, maple syrup, coconut milk, vanilla extract, and a pinch of salt to the pot with the sweet potatoes.
- Mash everything together until smooth and creamy, adjusting sweetness with more maple syrup if desired.
- Transfer the mixture to serving bowls and chill in the fridge for about 10 minutes before serving.
