- Fresh chestnuts - 200 grams
- Daikon radish - 100 grams, diced
- Carrot - 100 grams, diced
- Shiitake mushrooms - 50 grams, sliced
- Miso paste - 2 tablespoons
- Vegetable broth - 500 milliliters
- Soy sauce - 1 teaspoon
- Sesame oil - 1 teaspoon
- Scallions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 180°C (350°F). Cut a small 'X' on the flat side of each chestnut and roast them in the oven for 20 minutes until the shells start to open.
- Remove the chestnuts from the oven and let them cool slightly. Peel the shells and the inner skin, then roughly chop the chestnuts.
- In a pot, heat the sesame oil over medium heat. Add the diced daikon radish and carrot, sauté for 5 minutes until slightly softened.
- Add the sliced shiitake mushrooms to the pot and sauté for an additional 3 minutes.
- Pour in the vegetable broth and bring to a gentle boil. Add the chopped chestnuts, soy sauce, and miso paste, stirring well to combine.
- Reduce the heat and let the soup simmer for 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Serve the soup hot, garnished with chopped scallions.
