Ingredients

  • Fresh chestnuts - 200 grams
  • Daikon radish - 100 grams, diced
  • Carrot - 100 grams, diced
  • Shiitake mushrooms - 50 grams, sliced
  • Miso paste - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Soy sauce - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Scallions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F). Cut a small 'X' on the flat side of each chestnut and roast them in the oven for 20 minutes until the shells start to open.
  2. Remove the chestnuts from the oven and let them cool slightly. Peel the shells and the inner skin, then roughly chop the chestnuts.
  3. In a pot, heat the sesame oil over medium heat. Add the diced daikon radish and carrot, sauté for 5 minutes until slightly softened.
  4. Add the sliced shiitake mushrooms to the pot and sauté for an additional 3 minutes.
  5. Pour in the vegetable broth and bring to a gentle boil. Add the chopped chestnuts, soy sauce, and miso paste, stirring well to combine.
  6. Reduce the heat and let the soup simmer for 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
  7. Serve the soup hot, garnished with chopped scallions.
