- Soy sauce - 1 tablespoon
- Spring onions (sliced) - 2 stalks
- Tofu (cubed) - 100 grams
- Sesame oil - 1 teaspoon
Steps
- In a pot, heat the sesame oil over medium heat and add the diced carrots and sliced shiitake mushrooms. Sauté for about 5 minutes until softened.
- Add the cooked chestnuts and cubed tofu to the pot, stirring gently to combine with the vegetables.
- Pour in the dashi stock and bring the mixture to a gentle boil. Reduce the heat and simmer for 10 minutes.
- In a separate bowl, mix the miso paste with a small amount of the hot broth until smooth, then add it back into the pot along with the soy sauce.
- Stir in the cooked rice and let the soup simmer for an additional 5 minutes to heat through.
- Finally, garnish with sliced spring onions before serving.
