- Japanese short-grain rice - 150 grams
- Water - 300 ml
- Chestnuts (cooked and peeled) - 100 grams
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Mirin - 1 tablespoon
Steps
- Rinse the short-grain rice under cold water until the water runs clear to remove excess starch, then soak it in water for 30 minutes.
- After soaking, drain the rice and add it to a rice cooker or a medium-sized pot.
- Add 300 ml of fresh water, 30 grams of sugar, and 1/4 teaspoon of salt to the rice.
- If using a rice cooker, set it to the 'white rice' setting. If using a pot, bring to a boil over medium heat, then reduce to low and cover, cooking for about 15-20 minutes until water is absorbed.
- While the rice is cooking, chop the cooked chestnuts into small pieces.
- Once the rice is cooked, turn off the heat and let it sit covered for 10 minutes to steam.
- Gently fold in the chopped chestnuts and 1 tablespoon of mirin into the rice, mixing carefully to avoid breaking the rice grains.
- Serve warm, garnished with a few whole chestnuts on top if desired.
