Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 300 ml
  • Chestnuts (cooked and peeled) - 100 grams
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Mirin - 1 tablespoon

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear to remove excess starch, then soak it in water for 30 minutes.
  2. After soaking, drain the rice and add it to a rice cooker or a medium-sized pot.
  3. Add 300 ml of fresh water, 30 grams of sugar, and 1/4 teaspoon of salt to the rice.
  4. If using a rice cooker, set it to the 'white rice' setting. If using a pot, bring to a boil over medium heat, then reduce to low and cover, cooking for about 15-20 minutes until water is absorbed.
  5. While the rice is cooking, chop the cooked chestnuts into small pieces.
  6. Once the rice is cooked, turn off the heat and let it sit covered for 10 minutes to steam.
  7. Gently fold in the chopped chestnuts and 1 tablespoon of mirin into the rice, mixing carefully to avoid breaking the rice grains.
  8. Serve warm, garnished with a few whole chestnuts on top if desired.
