Ingredients

  • Japanese short-grain rice - 150 grams
  • Sweet chestnuts (cooked and peeled) - 100 grams
  • Water - 250 ml
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Sesame seeds (for garnish) - 1 tablespoon

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium saucepan, combine the soaked rice, 250 ml of water, salt, and maple syrup.
  3. Bring the mixture to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 minutes.
  4. After 15 minutes, remove the lid and gently fold in the sweet chestnuts and vanilla extract.
  5. Cover the pot again and cook for an additional 5 minutes on low heat.
  6. Remove from heat and allow to sit, covered, for 10 minutes to let the flavors meld.
  7. Serve warm, garnished with sesame seeds.
