Ingredients

  • Sugar - 30 grams
  • Cooked chestnuts - 100 grams
  • Red bean paste - 50 grams
  • Cornstarch - for dusting

Steps

  1. In a mixing bowl, combine glutinous rice flour and sugar. Gradually add water until a smooth batter forms.
  2. Pour the batter into a heatproof dish and steam for about 20 minutes until the mixture becomes translucent and sticky.
  3. Allow the steamed mixture to cool slightly, then dust your work surface with cornstarch.
  4. Transfer the dough to the prepared surface and knead gently until it is smooth and pliable.
  5. Divide the dough into 4 equal portions and flatten each piece into a round disc.
  6. Place a small spoonful of red bean paste and a piece of cooked chestnut in the center of each disc.
  7. Carefully fold the edges of the dough over the filling and pinch to seal, shaping them into balls.
  8. Dust the finished Kuri Daifuku with additional cornstarch to prevent sticking and serve.
