Ingredients

  • Koshihikari rice - 200 grams
  • Water - 250 ml
  • Rice vinegar - 30 ml
  • Sugar - 10 grams
  • Salt - 5 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Avocado - 1 ripe, sliced
  • Tofu (firm) - 100 grams, sliced
  • Nori sheets - 2 sheets
  • Sesame seeds - 1 tablespoon
  • Soy sauce - for serving

Steps

  1. Rinse the Koshihikari rice under cold water until the water runs clear, then drain and let it sit for 30 minutes.
  2. In a rice cooker or pot, combine the rinsed rice and 250 ml of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  3. While the rice is cooking, prepare the sushi vinegar by combining rice vinegar, sugar, and salt in a small saucepan. Heat gently until the sugar and salt dissolve, then remove from heat.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the sushi vinegar mixture. Allow the rice to cool to room temperature.
  5. Prepare the vegetables and tofu by julienning the cucumber and carrot, and slicing the avocado and tofu into thin strips.
  6. To assemble the sushi, place a sheet of nori on a bamboo mat or flat surface. Wet your hands to prevent sticking, and take a handful of sushi rice, spreading it evenly over the nori, leaving about 2 cm at the top edge free.
  7. Arrange the cucumber, carrot, avocado, and tofu in a line across the center of the rice-covered nori.
  8. Sprinkle sesame seeds over the filling, then carefully roll the sushi away from you, using the mat to help keep it tight. Seal the edge with a little water.
  9. Repeat the rolling process with the remaining ingredients. Once rolled, slice each sushi roll into bite-sized pieces with a sharp knife.
  10. Serve the Koshihikari Zushi with soy sauce for dipping.
