Ingredients
- Koshihikari rice - 200 grams
- Water - 250 ml
- Rice vinegar - 30 ml
- Sugar - 10 grams
- Salt - 5 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Avocado - 1 ripe, sliced
- Tofu (firm) - 100 grams, sliced
- Nori sheets - 2 sheets
- Sesame seeds - 1 tablespoon
- Soy sauce - for serving
Steps
- Rinse the Koshihikari rice under cold water until the water runs clear, then drain and let it sit for 30 minutes.
- In a rice cooker or pot, combine the rinsed rice and 250 ml of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, prepare the sushi vinegar by combining rice vinegar, sugar, and salt in a small saucepan. Heat gently until the sugar and salt dissolve, then remove from heat.
- Once the rice is cooked, transfer it to a large bowl and gently fold in the sushi vinegar mixture. Allow the rice to cool to room temperature.
- Prepare the vegetables and tofu by julienning the cucumber and carrot, and slicing the avocado and tofu into thin strips.
- To assemble the sushi, place a sheet of nori on a bamboo mat or flat surface. Wet your hands to prevent sticking, and take a handful of sushi rice, spreading it evenly over the nori, leaving about 2 cm at the top edge free.
- Arrange the cucumber, carrot, avocado, and tofu in a line across the center of the rice-covered nori.
- Sprinkle sesame seeds over the filling, then carefully roll the sushi away from you, using the mat to help keep it tight. Seal the edge with a little water.
- Repeat the rolling process with the remaining ingredients. Once rolled, slice each sushi roll into bite-sized pieces with a sharp knife.
- Serve the Koshihikari Zushi with soy sauce for dipping.
