Ingredients

  • Koshihikari rice - 1 cup (200g)
  • Water - 1.5 cups (360ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, thinly sliced
  • Snow peas - 100g, trimmed
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon (optional) for garnish

Steps

  1. Rinse the Koshihikari rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed.
  4. Remove from heat and let the rice sit, covered, for an additional 10 minutes.
  5. While the rice is resting, heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  6. Add the julienned carrot and sliced bell pepper to the skillet. Stir-fry for 3-4 minutes until slightly softened.
  7. Add the snow peas and continue to stir-fry for another 2 minutes until all vegetables are tender-crisp.
  8. Stir in the soy sauce and chopped green onion, mixing well to combine.
  9. Fluff the cooked rice with a fork and add it to the skillet with the vegetables, gently folding everything together.
  10. Serve hot, garnished with sesame seeds if desired.
