Ingredients

  • Koshihikari rice - 1 cup (200g)
  • Water - 1.2 cups (300ml)
  • Soy sauce - 1 tablespoon (15ml)
  • Mirin - 1 tablespoon (15ml)
  • Dashi (vegan) - 1 teaspoon (5g)
  • Sesame oil - 1 teaspoon (5ml)
  • Green onions - 2 stalks, thinly sliced
  • Nori (seaweed) - 1 sheet, cut into strips

Steps

  1. Rinse the Koshihikari rice under cold water until the water runs clear. Drain well.
  2. In a medium pot, combine the rinsed rice and water. Let it soak for 30 minutes to enhance the texture.
  3. After soaking, add soy sauce, mirin, and vegan dashi to the pot with the rice. Stir gently to combine.
  4. Cover the pot with a lid and bring it to a boil over medium heat. Once boiling, reduce the heat to low and simmer for 15 minutes.
  5. After 15 minutes, turn off the heat and let the rice steam in the pot for an additional 10 minutes without lifting the lid.
  6. Fluff the rice gently with a fork and drizzle sesame oil over it. Sprinkle with sliced green onions and mix lightly.
  7. Serve the rice warm, garnished with nori strips.
