Ingredients

  • Rice paper wraps - 4 sheets
  • Firm tofu - 200 grams, pressed and sliced
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1 medium, julienned
  • Fresh spinach - 50 grams, washed
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Begin by pressing the tofu to remove excess moisture, then slice it into thin strips.
  2. In a pan, heat the sesame oil over medium heat and sauté the tofu strips until golden brown, about 5-7 minutes. Remove from heat and let cool.
  3. Prepare the vegetables by julienning the carrot, cucumber, and red bell pepper. Set aside.
  4. In a small bowl, mix the soy sauce and gochujang to create a dipping sauce.
  5. Fill a shallow dish with warm water. Dip one rice paper wrap in the water for about 10-15 seconds until soft, then lay it flat on a clean surface.
  6. Place a few spinach leaves, a few strips of tofu, julienned vegetables, chopped green onion, and cilantro in the center of the rice paper wrap.
  7. Fold the sides of the wrap over the filling, then roll it up tightly from the bottom. Repeat with the remaining wraps.
  8. Cut the wraps in half diagonally and serve with the dipping sauce, garnished with sesame seeds.
