  • Cucumber - 1 medium, julienned
  • Red bell pepper - 1/2, julienned
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Chili flakes - 1/2 teaspoon
  • Rice vinegar - 10 ml
  • Salt - to taste

Steps

  1. Boil a pot of water and cook the soba noodles according to package instructions, usually about 6-8 minutes. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the soy sauce, sesame oil, minced garlic, rice vinegar, and chili flakes to create a dressing.
