- Sweet potato noodles - 100 grams

- Carrot - 1 medium, julienned
- Spinach - 100 grams, blanched
- Shiitake mushrooms - 50 grams, sliced
- Bell pepper - 1 medium, thinly sliced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Green onion - 2 stalks, chopped
- Black pepper - to taste
Steps
- Soak the sweet potato noodles in warm water for about 20 minutes until they soften, then drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat. Add the sliced onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic, julienned carrot, and sliced bell pepper to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender.
- Add the sliced shiitake mushrooms and stir-fry for an additional 2 minutes.
- Incorporate the drained sweet potato noodles into the skillet and mix well with the vegetables.
- Pour in the soy sauce and sesame oil, stirring everything together for about 3-4 minutes until the noodles are heated through and well coated.
- Add the blanched spinach, and toss the mixture to combine. Cook for another 1-2 minutes.
- Season with black pepper to taste, and remove from heat.
- Serve hot, garnished with toasted sesame seeds and chopped green onions.
