Ingredients

  • Napa cabbage - 300 grams
  • Daikon radish - 100 grams
  • Carrot - 50 grams
  • Green onions - 2 stalks
  • Garlic - 4 cloves
  • Ginger - 1 tablespoon (grated)
  • Korean red pepper flakes (gochugaru) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Vegan sugar or maple syrup - 1 tablespoon
  • Salt - 1 tablespoon
  • Water - 500 milliliters

Steps

  1. Chop the napa cabbage into quarters and then into bite-sized pieces. Place the cabbage in a large bowl and sprinkle with salt, mixing well to coat. Let it sit for about 20 minutes to draw out moisture.
  2. While the cabbage is resting, julienne the daikon radish and carrot. Chop the green onions into small pieces.
  3. In a separate bowl, combine minced garlic, grated ginger, gochugaru, soy sauce, and vegan sugar. Mix well to create the kimchi paste.
  4. After 20 minutes, rinse the salted cabbage under cold water to remove excess salt and drain well.
  5. In a large mixing bowl, combine the drained cabbage, daikon, carrot, green onions, and the kimchi paste. Use your hands (wearing gloves if desired) to mix everything thoroughly until the vegetables are evenly coated.
  6. Pack the kimchi mixture tightly into a clean glass jar, leaving some space at the top. Seal the jar and let it ferment at room temperature for 1-3 days, depending on your desired level of fermentation. Check daily and refrigerate once it reaches your preferred taste.
  7. Serve your kimchi as a side dish or use it in various recipes.
