Ingredients
- Sweet potato noodles - 100g
- Carrot - 1 medium, julienned
- Spinach - 100g, blanched and chopped
- Bell pepper - 1 medium, sliced
- Onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Sesame oil - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Green onion - 1 stalk, chopped
Steps
- Soak the sweet potato noodles in warm water for about 30 minutes until softened, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and translucent.
- Add the julienned carrot and sliced bell pepper to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Add the drained sweet potato noodles to the pan along with the soy sauce and sesame oil. Toss everything together and stir-fry for another 5-7 minutes until the noodles are heated through.
- Fold in the blanched spinach and mix well. Cook for an additional 1-2 minutes until the spinach is heated.
- Remove from heat, garnish with toasted sesame seeds and chopped green onion before serving.
