Ingredients

  • Sweet potato noodles - 100g
  • Carrot - 1 medium, julienned
  • Spinach - 100g, blanched and chopped
  • Bell pepper - 1 medium, sliced
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 2 tablespoons
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Green onion - 1 stalk, chopped

Steps

  1. Soak the sweet potato noodles in warm water for about 30 minutes until softened, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and translucent.
  3. Add the julienned carrot and sliced bell pepper to the pan. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  4. Add the drained sweet potato noodles to the pan along with the soy sauce and sesame oil. Toss everything together and stir-fry for another 5-7 minutes until the noodles are heated through.
  5. Fold in the blanched spinach and mix well. Cook for an additional 1-2 minutes until the spinach is heated.
  6. Remove from heat, garnish with toasted sesame seeds and chopped green onion before serving.
