Ingredients

  • Jasmine rice - 150 grams
  • Water - 300 ml
  • Sesame oil - 1 tablespoon
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, julienned
  • Shiitake mushrooms - 100 grams, sliced
  • Spinach - 100 grams, blanched
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
  3. While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the julienned carrot, zucchini, and sliced shiitake mushrooms to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
  5. Stir in the blanched spinach, soy sauce, and gochujang. Mix well and cook for an additional 2-3 minutes.
  6. Fluff the cooked rice with a fork and gently fold it into the vegetable mixture until well combined.
  7. Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.
