- Jasmine rice - 150 grams
- Water - 300 ml
- Sesame oil - 1 tablespoon
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, julienned
- Shiitake mushrooms - 100 grams, sliced
- Spinach - 100 grams, blanched
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 teaspoon
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for an additional 10 minutes.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the julienned carrot, zucchini, and sliced shiitake mushrooms to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
- Stir in the blanched spinach, soy sauce, and gochujang. Mix well and cook for an additional 2-3 minutes.
- Fluff the cooked rice with a fork and gently fold it into the vegetable mixture until well combined.
- Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds.
