- Water - 2 cups (500ml)
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green onion - 2, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Black sesame seeds - for garnish (optional)
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then drain.
- In a medium pot, combine the rinsed rice and water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, heat sesame oil in a large skillet over medium heat.
- Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).
- Add the diced carrot, zucchini, and red bell pepper to the skillet, cooking for about 5-7 minutes until the vegetables are tender.
- Stir in the gochujang and soy sauce, mixing well to coat the vegetables evenly.
- Fluff the cooked rice with a fork and add it to the skillet, combining it thoroughly with the vegetables and sauce. Season with salt to taste.
- Remove from heat and garnish with sliced green onions and black sesame seeds if desired.
