Ingredients
- Button mushrooms - 200 grams, finely chopped
- Firm tofu - 150 grams, drained and crumbled
- Panko breadcrumbs - 50 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, finely chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, preferably whole grain
- Vegan kimchi - 100 grams
- Sriracha sauce - 1 tablespoon
- Lettuce leaves - 2
- Sliced cucumber - 50 grams
Steps
- In a skillet over medium heat, add sesame oil and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the chopped mushrooms to the skillet and cook until they are softened and most of their moisture has evaporated, about 5-7 minutes.
- In a large bowl, combine the sautéed mushrooms, crumbled tofu, panko breadcrumbs, soy sauce, chopped green onions, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties and refrigerate for 10 minutes to help them firm up.
- While the patties chill, prepare the spicy kimchi sauce by mixing the vegan kimchi with sriracha in a small bowl.
- Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- Toast the burger buns lightly in the same skillet until golden.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty, sliced cucumber, and a generous spoonful of the spicy kimchi sauce. Top with the other half of the bun and serve immediately.
