Ingredients

  • Button mushrooms - 200 grams, finely chopped
  • Firm tofu - 150 grams, drained and crumbled
  • Panko breadcrumbs - 50 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, preferably whole grain
  • Vegan kimchi - 100 grams
  • Sriracha sauce - 1 tablespoon
  • Lettuce leaves - 2
  • Sliced cucumber - 50 grams

Steps

  1. In a skillet over medium heat, add sesame oil and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  2. Add the chopped mushrooms to the skillet and cook until they are softened and most of their moisture has evaporated, about 5-7 minutes.
  3. In a large bowl, combine the sautéed mushrooms, crumbled tofu, panko breadcrumbs, soy sauce, chopped green onions, salt, and black pepper. Mix until well combined.
  4. Form the mixture into two patties and refrigerate for 10 minutes to help them firm up.
  5. While the patties chill, prepare the spicy kimchi sauce by mixing the vegan kimchi with sriracha in a small bowl.
  6. Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  7. Toast the burger buns lightly in the same skillet until golden.
  8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the patty, sliced cucumber, and a generous spoonful of the spicy kimchi sauce. Top with the other half of the bun and serve immediately.
