Ingredients

  • Konjac noodles - 200 grams

  • Ginger - 1 teaspoon, minced
  • Green onions - 2, sliced
  • Carrot - 1 small, julienned
  • Bell pepper - 1 small, julienned
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Rinse the konjac noodles under cold water for 1-2 minutes to remove any odor.
  2. In a large pan, heat the sesame oil over medium heat and add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced green onions, julienned carrot, and bell pepper to the pan and stir-fry for 3-4 minutes until the vegetables are slightly tender.
  4. Add the rinsed konjac noodles to the pan, followed by the soy sauce and mirin, stirring well to combine everything.
  5. Add the spinach and cook for an additional 2-3 minutes until wilted and heated through.
