Ingredients

  • Konjac noodles - 200 grams
  • Cucumber - 1 medium, julienned
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1/2, diced
  • Green onions - 2, finely chopped
  • Carrot - 1 small, grated
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the konjac noodles under cold water and drain well.
  2. In a pot of boiling water, blanch the konjac noodles for about 2-3 minutes to soften them, then drain again and let cool.
  3. In a large mixing bowl, combine the cucumber, cherry tomatoes, red bell pepper, green onions, and grated carrot.
  4. Add the cooled konjac noodles to the bowl with the vegetables.
  5. In a separate small bowl, whisk together the sesame oil, soy sauce, rice vinegar, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine all the ingredients thoroughly.
