- Konjac rice - 300 grams
- Dashi stock - 250 ml
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Shiitake mushrooms - 50 grams, sliced
- Carrot - 1 small, julienned
- Green onion - 1, finely chopped
- Nori seaweed - 1 sheet, cut into strips
- Salt - to taste
Steps
- Rinse the konjac rice under cold water for about 2-3 minutes to remove any residual odor.
- In a medium pot, combine the dashi stock, soy sauce, mirin, and sesame oil. Bring to a gentle simmer over medium heat.
- Add the rinsed konjac rice to the pot and stir to combine. Cook for about 5 minutes, allowing the rice to absorb the flavors.
- In a separate skillet, heat a little oil over medium heat and sauté the sliced shiitake mushrooms and julienned carrot until tender, about 3-4 minutes.
- Add the sautéed vegetables to the pot with the konjac rice and stir well. Cook for an additional 5 minutes.
- Once the konjac rice is heated through and the flavors meld, remove from heat and season with salt to taste.
- Serve the Konjac Gohan in bowls, garnished with chopped green onions and nori strips.
