Ingredients

  • Konjac rice - 300 grams
  • Dashi stock - 250 ml
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Shiitake mushrooms - 50 grams, sliced
  • Carrot - 1 small, julienned
  • Green onion - 1, finely chopped
  • Nori seaweed - 1 sheet, cut into strips
  • Salt - to taste

Steps

  1. Rinse the konjac rice under cold water for about 2-3 minutes to remove any residual odor.
  2. In a medium pot, combine the dashi stock, soy sauce, mirin, and sesame oil. Bring to a gentle simmer over medium heat.
  3. Add the rinsed konjac rice to the pot and stir to combine. Cook for about 5 minutes, allowing the rice to absorb the flavors.
  4. In a separate skillet, heat a little oil over medium heat and sauté the sliced shiitake mushrooms and julienned carrot until tender, about 3-4 minutes.
  5. Add the sautéed vegetables to the pot with the konjac rice and stir well. Cook for an additional 5 minutes.
  6. Once the konjac rice is heated through and the flavors meld, remove from heat and season with salt to taste.
  7. Serve the Konjac Gohan in bowls, garnished with chopped green onions and nori strips.
