  • Konjac rice - 200 grams

  • Green onions - 2, chopped
  • Frozen peas - 50 grams
  • Soy sauce - 2 tablespoons (or tamari for gluten-free)
  • Egg - 2, beaten
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the konjac rice under cold water for a few minutes, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the diced carrot and red bell pepper to the skillet, cooking for 3-4 minutes until they begin to soften.
  4. Stir in the konjac rice, mixing well with the vegetables. Cook for an additional 3-4 minutes, stirring occasionally.
  5. Push the rice mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them into the rice.
  6. Add the frozen peas and chopped green onions to the skillet. Pour in the soy sauce and sesame oil, stirring everything together. Season with salt and black pepper to taste.
  7. Cook for another 2-3 minutes, ensuring everything is heated through. Serve hot.
