Ingredients

  • Cooked Japanese short-grain rice - 200 grams
  • Kombu seaweed - 10 grams
  • Green tea leaves - 2 teaspoons
  • Water - 500 ml
  • Soy sauce - 2 teaspoons
  • Sesame seeds - 1 tablespoon
  • Chopped green onions - 2 tablespoons
  • Nori (seaweed) strips - for garnish
  • Salt - to taste

Steps

  1. In a medium saucepan, bring 500 ml of water to a boil and then remove from heat.
  2. Add the kombu seaweed to the hot water and let it steep for about 10 minutes.
  3. Once steeped, remove the kombu from the water and discard it (or save it for another use).
  4. Add the green tea leaves into the kombu-infused water and let it steep for another 3-5 minutes.
  5. Strain the tea into a bowl and add soy sauce and salt to taste.
  6. In serving bowls, place 100 grams of cooked rice in each bowl.
  7. Ladle the kombu tea over the rice until it is just submerged.
  8. Sprinkle sesame seeds and chopped green onions on top.
  9. Garnish with nori strips and serve immediately.
