Ingredients
- Ground beef (kosher) - 300 grams
- Kombu (dried seaweed) - 10 grams
- Garlic (minced) - 1 clove
- Ginger (grated) - 1 teaspoon
- Soy sauce (kosher) - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Panko breadcrumbs - 30 grams
- Sesame oil - 1 teaspoon
- Burger buns (kosher) - 2
- Miso paste - 1 tablespoon
- Mayonnaise - 2 tablespoons
- Shredded cabbage - 50 grams
- Sliced cucumber - 50 grams
- Sliced radish - 30 grams
- Green onions (sliced) - 1 tablespoon
Steps
- Soak the kombu in warm water for 10 minutes, then finely chop it.
- In a mixing bowl, combine the ground beef, chopped kombu, minced garlic, grated ginger, soy sauce, black pepper, panko breadcrumbs, and sesame oil. Mix until well combined.
- Form the mixture into 2 equal patties, about 1.5 cm thick.
- Preheat a skillet over medium-high heat and add a little oil. Cook the patties for about 4-5 minutes on each side, or until they reach an internal temperature of 70°C (160°F).
- While the burgers are cooking, prepare the miso mayonnaise by mixing the miso paste and mayonnaise in a small bowl until smooth.
- Toast the burger buns lightly on the skillet for 1-2 minutes until golden.
- Assemble the burgers by spreading the miso mayonnaise on the bottom bun, then adding the cooked beef patty, shredded cabbage, sliced cucumber, sliced radish, and green onions. Top with the other half of the bun.
- Serve immediately with your choice of side.
