Ingredients

  • Udon noodles - 200 grams
  • Vegetable broth - 750 milliliters
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Dashi powder (vegan) - 1 teaspoon
  • Fried tofu (aburaage) - 100 grams, sliced
  • Green onions - 2 stalks, finely chopped
  • Nori seaweed - 1 sheet, cut into strips
  • Shiitake mushrooms - 100 grams, sliced
  • Spinach or bok choy - 50 grams, blanched
  • Sesame oil - 1 teaspoon

Steps

  1. Bring a pot of water to a boil and cook the udon noodles according to the package instructions, usually about 8-10 minutes. Once cooked, drain and set aside.
  2. In a large pot, combine the vegetable broth, soy sauce, mirin, and dashi powder. Bring to a gentle simmer over medium heat.
  3. Add the sliced shiitake mushrooms to the broth and let them simmer for about 5 minutes until tender.
  4. Stir in the sesame oil and blanched spinach or bok choy into the broth.
  5. To serve, place a portion of the cooked udon noodles in bowls, ladle the broth with mushrooms and greens over the noodles.
  6. Top each bowl with the sliced fried tofu, chopped green onions, and strips of nori seaweed.
