- Udon noodles - 200 grams
- Vegetable broth - 750 milliliters
- Soy sauce - 3 tablespoons
- Mirin - 2 tablespoons
- Dashi powder (vegan) - 1 teaspoon
- Fried tofu (aburaage) - 100 grams, sliced
- Green onions - 2 stalks, finely chopped
- Nori seaweed - 1 sheet, cut into strips
- Shiitake mushrooms - 100 grams, sliced
- Spinach or bok choy - 50 grams, blanched
- Sesame oil - 1 teaspoon
Steps
- Bring a pot of water to a boil and cook the udon noodles according to the package instructions, usually about 8-10 minutes. Once cooked, drain and set aside.
- In a large pot, combine the vegetable broth, soy sauce, mirin, and dashi powder. Bring to a gentle simmer over medium heat.
- Add the sliced shiitake mushrooms to the broth and let them simmer for about 5 minutes until tender.
- Stir in the sesame oil and blanched spinach or bok choy into the broth.
- To serve, place a portion of the cooked udon noodles in bowls, ladle the broth with mushrooms and greens over the noodles.
- Top each bowl with the sliced fried tofu, chopped green onions, and strips of nori seaweed.
