Ingredients

  • Udon noodles - 200 grams
  • Dashi stock - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Aburaage (fried tofu) - 2 pieces
  • Green onions - 2 stalks, chopped
  • Nori (seaweed) - 1 sheet, shredded
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Cook the udon noodles according to the package instructions, then drain and set aside.
  2. In a pot, bring the dashi stock to a simmer over medium heat.
  3. Add soy sauce, mirin, and salt to the dashi stock, adjusting the flavors to your preference.
  4. While the broth is simmering, prepare the aburaage by cutting it in half and briefly frying it in a pan until golden brown.
  5. Once the broth is ready, add the cooked udon noodles to the pot and let them heat through for about 2 minutes.
  6. Serve the udon noodles in bowls, ladle the hot broth over them, and top with aburaage, chopped green onions, shredded nori, and sesame seeds.
