Ingredients
- Udon noodles - 200 grams
- Dashi stock - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Aburaage (fried tofu) - 2 pieces

- Nori (seaweed) - 1 sheet, shredded
- Sesame seeds - 1 tablespoon

Steps
- Cook the udon noodles according to the package instructions, then drain and set aside.
- In a pot, bring the dashi stock to a simmer over medium heat.
- Add soy sauce, mirin, and salt to the dashi stock, adjusting the flavors to your preference.
- While the broth is simmering, prepare the aburaage by cutting it in half and briefly frying it in a pan until golden brown.
- Once the broth is ready, add the cooked udon noodles to the pot and let them heat through for about 2 minutes.
- Serve the udon noodles in bowls, ladle the hot broth over them, and top with aburaage, chopped green onions, shredded nori, and sesame seeds.
