Ingredients

  • Udon noodles - 200 grams
  • Dashi broth (vegan) - 800 ml
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Fried tofu (aburaage) - 100 grams
  • Green onions - 2, chopped
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon
  • Shiitake mushrooms - 50 grams, sliced
  • Spinach - 100 grams

Steps

  1. Bring a pot of water to a boil and cook the udon noodles according to package instructions, typically around 8-10 minutes. Drain and set aside.
  2. In a separate pot, combine the vegan dashi broth, soy sauce, and mirin. Bring to a simmer over medium heat.
  3. Add the sliced shiitake mushrooms and spinach to the broth, cooking for about 5 minutes until the vegetables are tender.
  4. While the broth is simmering, prepare the fried tofu by cutting it into smaller pieces and gently warming it in a pan for 2-3 minutes until heated through.
  5. Divide the cooked udon noodles between two bowls, then ladle the hot broth and vegetables over the noodles.
