- Nori seaweed - 1 sheet, cut into strips
- Sesame seeds - 1 tablespoon
- Shiitake mushrooms - 50 grams, sliced
- Spinach - 100 grams
Steps
- Bring a pot of water to a boil and cook the udon noodles according to package instructions, typically around 8-10 minutes. Drain and set aside.
- In a separate pot, combine the vegan dashi broth, soy sauce, and mirin. Bring to a simmer over medium heat.
- Add the sliced shiitake mushrooms and spinach to the broth, cooking for about 5 minutes until the vegetables are tender.
