Kitsune Soba

- Soba noodles - 200 grams
- Aburaage (fried tofu) - 100 grams
- Dashi stock (vegetarian) - 600 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Green onions - 2 stalks, sliced
- Nori (seaweed) - 2 sheets, cut into strips
- Sesame seeds - 1 tablespoon, toasted
- Spinach - 100 grams, blanched
Steps
- Bring a large pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-5 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.
- In a separate pot, heat the vegetarian dashi stock over medium heat. Add soy sauce and mirin, stirring to combine.
- While the broth is heating, prepare the aburaage by cutting it into strips. In a small pan, lightly fry the strips until golden brown and slightly crispy.
- Once the broth is hot, add the cooked soba noodles and blanch them for a minute in the broth to warm them up.
- To serve, divide the soba noodles into two bowls, ladle the hot broth over the noodles, and top with the fried tofu, blanched spinach, sliced green onions, and nori strips.
- Sprinkle with toasted sesame seeds before enjoying.
