Ingredients

  • Soba noodles - 200 grams
  • Aburaage (fried tofu) - 100 grams
  • Dashi stock (vegetarian) - 600 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks, sliced
  • Nori (seaweed) - 2 sheets, cut into strips
  • Sesame seeds - 1 tablespoon, toasted
  • Spinach - 100 grams, blanched

Steps

  1. Bring a large pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-5 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.
  2. In a separate pot, heat the vegetarian dashi stock over medium heat. Add soy sauce and mirin, stirring to combine.
  3. While the broth is heating, prepare the aburaage by cutting it into strips. In a small pan, lightly fry the strips until golden brown and slightly crispy.
  4. Once the broth is hot, add the cooked soba noodles and blanch them for a minute in the broth to warm them up.
  5. To serve, divide the soba noodles into two bowls, ladle the hot broth over the noodles, and top with the fried tofu, blanched spinach, sliced green onions, and nori strips.
  6. Sprinkle with toasted sesame seeds before enjoying.
